Impressive looking and easy to make!
Rocky Road Cupcakes recipe
For the cakes
115g butter or margarine
100g caster sugar
2 eggs
115g self raising flour
3 tablespoons cocoa powder
3 tablespoons milk
choc chips – any or mixed
handful mini marshmallows
flaked almonds or brazil nuts
For the topping
75g dark chocolate – chopped
50ml double cream
Optional extras
flaked almonds or brazil nuts
choc chips
mini marshmallows
To make;
- Beat butter and sugar together until light and fluffy
- Beat in eggs
- Stir in flour and cocoa powder and then milk
- Add choc chips, marshmallows and almonds
- Spoon into cases
- Bake at 180C/350F for approx 15mins
- Cool completely
- Heat cream until nearly boiling and pour over chocolate and leave for 5 mins
- Stir until smooth and creamy then leave for another 30 mins until thick and glossy
- Spread on cakes and sprinkle extra toppings over if required
