So I’m back on a healthy eating kick again, listening to my Slimpod each day, and trying to cut down on sugar as much as possible. I’ve been experimenting with healthy foods – including quinoa, which is a great grain which doubles up as a protein source.  As the weather is so nice I was looking for quinoa salad recipes for a summer lunch.

When I’m trying to lose weight I like to try foods and combinations that are healthy and delicious.  That way, even though I am only eating a small portion of them, each mouthful is a joy and so I get satisfied more easily.  I’ve discovered that I love dill, and the lemon juice in this recipe makes the whole thing taste fresh and zingy.

I adapted a recipe from Abel and Cole here, but I’m really pleased with the result.

Ingredients (per person)

  • 30g uncooked quinoa
  • 60g cucumber
  • small handfull dill
  • 10ml lemon juice
  • 80g feta
  • 1/2 avocado

  1. Cook the quinoa according to the instructions
  2. While it is cooking finely chop the dill and dice the cucumber finely
  3. Chop the feta into squares or crumble it
  4. Dice the avocado
  5. Drain the quinoa and mix all the other ingredients in with it.  Add lemon juice to taste – I also seasoned mine with a dash of soy sauce because I like it that way
